I sat down at a table in the café and called to the waiter: “Excuse me, one coffee, please.” The waiter asked, “Is hot all right?”, so I answered, “Yes, hot, please.” The waiter smiled and said, “Just a moment, please.”

At this café, you order after you sit down. But at some places you order at the counter first. The café by the station I went to last week was like that. I sat at a table and waited a whole five minutes for someone to come over. Only when I saw the person next to me come back from the counter with a cup did it finally dawn on me.

Different places, different ways of ordering. But what you say is almost the same: say what you want and add 「お願いします」. That’s all. Next time I go into a café I don’t know, I think I’ll look at where the people around me are ordering before I sit down.
Three expressions
To take away, please.
「〜でお願いします」: “… please”, asking for something a certain way. Before 「で」 goes the option you have chosen, such as hot or iced, the size, or taking away or eating in; for the item itself, use 「〜をお願いします」. In the story, 「ホットでお願いします」 means “hot, please”.
Is it all right to put it all on one bill?
「〜でよろしいですか」: “Is … all right?”, a polite way for staff to check with a customer; more polite than 「〜でいいですか」. You can answer 「はい、〜でお願いします」. In the story, 「ホットでよろしいですか」 means “Is hot all right?”
I’ll look at the menu and then decide.
「〜てから」: “first …, then …”. The te form of a verb plus 「から」 gives the order of two actions, stressing that the first one is finished. In the story, 「席に着いてから注文します」 means “you sit down and then order”.
One small thing to do
Tip
Think of a drink you often have and say it quietly once: 「〜を一つお願いします」, then add 「ホットで」 or 「アイスで」. No need to go to a café; saying it to the mirror is fine.
